also will it give a permanent power supply for the memory so it does not lose settings after the engine is turned off.

The Sony loom in store should support the unit quoted, and although it terminates in an ISO socket (standard for all aftermarket units), which the Seat may well have too (looks like it can plug straight in), some of the connections within the plug on the Seat differ from ISO (notably electric antenna / speed pulse from the car), so a PC2-69-4 will be required between the car loom and the Sony loom if the car is 99-06 model year (ISO plug on car), or a PC2-75-4 if the car is from model year 06 onwards (Quadlock plug on car).

The plug configuration may not be evident until the stereo has been removed from the car as this is a 'changeover year' vehicle, so this would need to be done as part of a 'paid-for' installation in-store.
